Blanc de Noirs
Pinot Noir is one of the three main grape varieties used in Champagne, along with Chardonnay and Pinot Meunier. While most core bottlings, notably the non-vintage versions, will be a blend of all three, many producers make a bottling solely from Pinot Noir, known as a Blanc de Noirs. Though still white in colour, such wines typically showcase a fuller, richer, red-fruit profile, with a more rounded mouthfeel and softer acidity that can develop creamy brioche notes over time. Among the producers to make such a style are Philipponnat, Bollinger and Billecart-Salmon.
