Bordeaux Sweet Wine
As with the region’s more plentiful red wines, the sweet wines of Bordeaux are among the most renowned wines of their type anywhere in the world. Largely produced in the appellations of Sauternes and Barsac, they rely on the unpredictable but magical process of botrytis that affects the grapes in late autumn. This ‘noble rot’, brought on by cool, wet, humid conditions, concentrates the sugar in the Sauvignon Blanc and Semillon grapes, yielding a wonderfully intense sweetness that makes the wines as gloriously indulgent as they are indefinitely ageworthy. The very top examples, from the likes of the legendary Château d’Yquem, are a dessert in themselves, such is their luscious array of flavours, while also matching superbly with cheese.
