The Sé is made from the estate’s youngest vines, from vineyards that are now 12 years old that surround the estate’s new winery, and is aged in one third new oak, one third second fill, and one third third fill barrels. There’s incredible freshness and purity here, with notes of dark chocolate and a hint of dried herbs. There’s dried fruit on the finish, with wonderful salinity and a little tapenade, too. This is very impressive.
