From Lias clay soils facing west. Not content with the classic 6 years and 3 months required by law for Vin Jaune, Stéphane has pushed the boundaries yet further with 12 year ageing for this wine. After so long without topping up, less than half the volume remained in the barrel because of the concentrating effect of ageing. Raised mostly in a cool cellar with some humidity, the result is a long, deep wine with incredible persistence. It has the classical Chateau Chalon notes of curry and citrus, and Stéphane feels this is a wine for ageing. 2011
