Made from Pinot Noir must that undergoes a long maceration before fortification with Tissot’s own Marc du Jura. There’s plenty of cherry fruit and some grape skin notes courtesy of the Marc. The alcohol is added gradually in 5 or 6 goes to allow the fruit to ferment a little in between additions, which adds complexity. It’s concentrated and generous, but with a pleasing freshness behind.
