Domaine Paul Pillot

Thierry and Chrystelle Pillot are the sibling team behind the wines of Domaine Paul Pillot and regarded as two of the most exciting winemakers in Burgundy. The estate was established by their great grandfather, Jean-Baptiste Pillot, in 1900 but it is down to the hard work of Thierry and Chrystelle that it is now one of the stars of St-Aubin and Santenay, are organically farmed. The vines in their Premier and Grand Cru vineyards are tended entirely by hand. In the winery, Thierry opts for as little intervention as possible, using long, gentle ageing in large barrels to allow the refined character of his wines to shine through.
